Day 6 of 30

Happy Birthday to you, happy birthday to you, happy birthday Hubster, happy birthday to you!

We started the day off with brunch with some awesome friends at this quaint little bistro in town.

-I ordered the veggie frittata without the cheese and fruit on the side in place of potatoes and banana bread that normally comes with it. The only thing that I did miss was having a mimosa :( Water is just not the same.

Lunch consisted of leftover salad and a nap.

Dinner. We went to my parents for a cookout where they pulled out all the stops. My sweet mom even added fruit to the cheese and cracker plate so I would be less tempted. They were both great about trying to make sure I had plenty of options available that fit Whole30. The menu was as follows:

  • Steak with mushrooms
  • Lobster tail
  • Sweet potatoes
  • Salad
  • Corn -I did not eat
  • Rolls -I did not eat
  • Homemade lemon ice box pie made from my grandmother's recipe- yes, I resisted :)
All in all it was an amazing night, just like all the nights we get to spend with my folks. We are really lucky to have them so close.

Day 5 of 30

Party Day Is Here!!!!

This morning was the best Saturday morning ever! I woke up with my to do list running through my mind and a little stressed that I had slept in. Then something magical happened. I realized that I was alone in my bed. Now the hubs will often get up before me on weekends but the dog, the dog is another story. He stays in bed until physically removed unless he has the prospect of a ride or a run. I was still in bed so I knew he was not running. As I tip toed around the house trying to find my 2 favorite guys they were no where to be found. It was time to call. When hubs picked up he told me all of the things he had completed while he let me sleep. It was half of my to do list :). I am a lucky woman.

Since all of that was taken care of I decided I had time to make a yummy breakfast casserole. I originally found this recipe on http://paleomg.com/savory-breakfast-casserole/ but made a few changes.

Ingredients

  • 2 1/2 spicy chicken sausage
  • 1 onion chopped
  • 1/2 sweet potato shredded
  • 6 eggs
  • Garlic powder to taste (I use lots!)
  • Siriachi sauce
Brown the sausage and shred the potato in the food processor. I actually went ahead,and doubled this part so I could throw it in the freezer and hae it ready to go later in the week for another pan.
Once that is done just mix everything together and poor into a square Pyrex that has been sprayed with olive oil Pam. Through into a 350 degree oven for 20 minutes. Viola. Breakfast for a few days is done.

Since I had slept in and it took me a while to get breakfast going between getting the house ready I did not really eat lunch. I guess you would call the casserole my brunch.

The party got started and the biggest challenge was these babies.

Our friend Jenn makes these s'more Rice Krispy treats and they are like crack!

The good news is there is no gluten in any of this so at least I was good on that...

Pork tenderloin, salad with red wine vinegar, and watermelon

As the party went on I knoshed on more watermelon. Yay me!!

Day 4 of 30

So today is not a great example of my eating habits. Basically I did not eat much. The day was busy and I just didn't really plan very well. Believe me I have learned from experience that you really do have to eat to lose weight (and have energy).

Breakfast:

-I had half a sliced apple and a 1/4 of a cold hamburger as I drove to work. Wha wha :(

Lunch:

-the kids had to get caught up in Algebra and quite frankly I was not really feeling confident in my ability to help them with this chapter so I went down to the Algebra class during lunch. At that point the school day was almost over and all I really wanted was a nap. By the time I got up from my nap there was only about an hour until dinner, so I ate the chicken thigh I had left and a few bites of sweet potato. Not awesome and terrible timing but at least I got the protein and veggie balance in.

Dinner:

-Again LA ME. I used the last of the hamburger to create a "hamburger salad". Yeah I would not recommend it. But here it is just in case

  • Hamburger
  • Spring mix
  • Red onion
  • Pickles
  • Tomatoes
  • Ground mustard

Tomorrow is the party so hopefully that will be better. Sorry to be unhelpful today.

Day 3 of 30

Field trip day is here. I decided to go ahead and have one cup of coffee today to stave off the guaranteed headache of caffeine withdrawal. I was good though and drank it black. I think that is when I really realized how bad my addiction really was. Gross.

Breakfast

With having to hustle out the door, I ended up eating my scrambled eggs out of Tupperware on the bus with half an apple. Therefore no picture, sorry :(

Lunch

Lunch was scheduled at a college campus' food court so I went in to it expecting a challenge. Turns out they had this really cool salad place where you kind of built your own salad. I just chose every paleo option so I ended up with a random salad containing strawberries, eggs, black olives, and cauliflower. It was actually pretty good. I continued my caffeine cheat with unsweetened tea.

Din-Din
I love my hubby and living in paradise with him so grilling outside is a nice little at home date night for us. We decided on burgers without cheese and buns. Kept it simple with come grilled squash and zucchini on the side.
I better start making some recipes if this is going to be interesting at all. Oh well I figured I would keep it simple (and cheap) to get started. This weekend is my husband's work party at our house as well as his birthday. Going to be challenging but I am up for it. The Croatia trip is 30 days away -- my favorite number this year.

Day 2 of 30

Today was supposed to be a long one. I have a field trip tomorrow so getting everything organized has to happen today. On top of that I have a dr appointment and was supposed to go to St. Pete with the hubs. Unfortunately going caffeine free and sinuses combined for a killer headache! The good news is I kept up the diet anyhow.

Breakfast

- simple scrambled eggs with Mrs. Dash covered in last night's salsa and a banana

so hard to skip the coffee!!! Just decided I need a break from the habit :)

Lunch

Just leftover dinner from last night salad with chicken on top and avocado

 

Dinner

I have this issue where, well, basically I stink at making chicken breast. For some reason it is always terrible. So since I was not feeling too awesome and the hubs was to around I decided to take a chance on the ease of chicken thighs. They were so cheap and turned out so yummy. I just put some garlic in a pan with some olive oil, laid the thighs in there and threw on some Mrs. Dash. They turned a beautiful brown color. While those cooked I heated up some frozen squash and sliced up an apple. Magic! Dinner and dessert.

30 Day Challenge

So as I go through my 30th year I am trying new things. The only rule is that each new thing has to lead to bettering myself or my family. I spent Spring Break running a 15k Olympic qualifying race and then a half marathon (which was decidedly less fun). My new adventure is going Paleo. Basically for the next 30 days I just have to eat "REAL" food :). Sounds easy enough to me. Guess we will see. I say we because I am going to track everything I eat here to help share ideas and recipes. And to keep me on track.

Tonight we start with dinner:
Paleo chicken salad


I am starting simple. This was just
chicken tenders cut up and cooked in olive,oil with chili powder, cayenne pepper, and garlic
-green peppers
-spring mix and spinach
-Avocado slices
